
This circular platter is created for the European stage of the Bocuse d’Or for the same chef. It is a story of Denmark on a plate, with a circle of Corian around a pool of hammered and textured silver, and tiny beech nuts around it at the edge. In the centre, a beach tree rises with tiny silver leaves to elevate a particular part of the dish. The idea was to evoke a nationally known Danish song that speaks of the country having beech trees that lead down to the sea.
